Method: </div>

1. Preheat the oven to 180˚C. Grease your muffin pan and set aside.</div>

2. In the bowl, combine the flour and black pepper. Add the cubes of butter and mix until it becomes crumbly and the butter pieces are about the size of small peas. (Alternatively, this can be done in a regular mixing bowl, using a pastry blender or two knives to cut the butter into the dry ingredients.) Add in the grated cheese and mix just until incorporated.<br />

3. Mix in the tomatoes, bacon, and yogurt and milk into the flour mixture. Combine carefully (or you can do this by hand) just until all the ingredients are incorporated. If the dough is too dry to come together, add a little milk to make the dough to come together. Scoop into the greased muffin tray.<br />

4. Bake for 18-20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.<br />

Thanks to Pinterest, my love for food has reached greater heights. Hee hee How can you not fall in love with those photos taken so artistically that will make you salivate just by looking at 'em?!<br />

It was a few months back when I stumbled upon making these crispy wontons in Pinterest. I never thought they could be this yummy without having to be deep fried! And there were a loooot of variations in using them - from appetizers to the usual Asian delights to desserts. Just wonderful!<br />

Since the husband and I couldn't finish the <a href="http://avagabondmom.blogspot.com.au/2013/10/spinach-artichoke-dip.html" target="_blank">Spinach Artichoke Dip</a>, I thought of using it as a filling for my crispy wontons as appetizers. And they didn't disappoint at all!<br />

What you need:<br />

<li>Wonton wrappers (the big ones to cover the whole muffin tin, if not, you can use 2 sheets which I did)</li>
<li><a href="http://avagabondmom.blogspot.com.au/2013/10/spinach-artichoke-dip.html" target="_blank">Spinach artichoke dip</a></li>
<li>Sausage (optional)</li>
<li>Garlic & onion for sauteing </li>
<li>Olive oil</li>
<li>Mushrooms (optional)</li>
<li>Sundried tomatoes (optional)</li>
<li>1/3 cup milk</li>
<li>Cooking spray or oil and brush</li>

1. Grease your muffin tin and arrange the wonton wrappers to create a cup. Bake for about 10-15 minutes at 150 degrees Celsius or until they turn brown. Remove from oven and let cool.</div>

2. In a saucepan, saute garlic and onion in olive oil. Add mushrooms and tomatoes. Add milk and the dip. Cook until mixture becomes thick. Remove from heat.</div>

3. Spoon the mixture into the cooked wonton cups. Bake for another 15 minutes or until they become bubbly.</div>

So last Monday, I bought a bunch for her to snack on during the week. But she just didn't want to eat them after a few bites. So I had some leftovers and thought of making my first banana <i>loaf</i>. The husband doesn't eat banana (please don't ask me why) so I guess it'll just be me and the little girl finishing this off!<br />

I tried looking for a recipe that has yogurt. I dunno why but I just wanted to incorporate some vanilla yogurt into the loaf :P Until I got to an article in Huffington Post. Of all places, huh?<br />
<br />
I tried tweaking the recipe a bit - added chocolate chips and crumble on top.<br />
<br />
<b>Ingredients:</b><br />

<li>1/2 cup oil</li>
<li>1/3 cup yogurt</li>
<li>3/4 cup brown sugar</li>

<li>Pinch of salt</li>
<li>1 1/4 cups mashed ripe bananas</li>
<li>2/3 cup chocolate chips</li>

<li>1/2 cup corn flakes (the plain ones, not sweet)</li>

<b>Method:</b><br /><br />Combine 1/2 cup sugar with the cinnamon in a shallow bowl. Set aside. Line a plate with paper towels.<br /><br />1. Using a small saucepan, combine water, sugar, salt and oil. Bring to a boil and remove from heat. Add in the flour until everything comes together to form a ball. Put mixture into a piping bag with the star tip.</div>

2. I used my cast iron skillet to fry the churros. But you can use any frying pan that can do little bit of deep frying. Make sure the oil is hot enough before you pipe in your churros.</div>

3. Pipe the dough to your desired length. I had mine about 3 inches. Cut the churros to release them into the oil, careful not to drop it into the oil to avoid splatter. Fry until they turn golden brown. </div>

<b>Method:</b><br /><br />1. In a skillet, melt butter. Saute garlic and add spinach. Cook until the spinach leaves wilt. Remove from heat and squeeze out the juice. Set aside spinach and garlic.<br /><br />2. In the same skillet, add in the artichokes and cook over medium high heat for several minutes. Remove them and let them cool. Once cool, chop the artichokes and spinach together. For me, I used my immersion blender and pulsed them for a couple of seconds.<br /><br />3. In the same skillet or a different pot, melt butter and whisk in flour until it makes a roux then pour in milk. Stir and cook until slightly thickened; add more milk if it becomes too thick.<br /><br />4. Add the cheeses and season to taste. Mix in the artichokes and spinach to the sauce. Stir to combine.<br /><br />5. Pour into buttered baking dish. Top with extra grated cheese and bake at 375 for 15 minutes, or until cheese is melted and bubbly. Serve with bread or crackers.<br /><br /><br />

It will be a bit sticky but be careful not to over-knead it.<br /><br />4. You can use a rolling pin and sprinkle flour over the dough to roll it out and cut into rounds using a cutter. On the way home, we passed by the Oriental store and made me think about making <i>biko</i>. For those who don't know what it is, <i>biko </i>is a sticky rice cake that is commonly eaten as a snack or dessert in the Philippines. It's essentially made of glutinous rice, brown sugar, and coconut milk. Some add jackfruit (<i>langka</i>), pandan flavor, or even nuts as toppings. <div>

As for me, I was feeling adventurous so I thought of adding a Singaporean flavor, the <i>gula melaka</i>. Since it's generally used by Malays in their <i>kueh</i> making, I thought, maybe it would also be a great complement to my <i>biko</i>! <li>1 can 425ml of coconut milk</li>
<li>2 cups of glutinous rice, soaked in water for at least 4 hours</li>

<b>Method:</b><br />

1. Soak the 2 cups of glutinous rice in water for 4-6 hours. Drain the water and cook the rice in the rice cooker with two cups of water. Once the water evaporates, turn off the cooker.<br />
<br />2. In a heavy skillet, pour the coconut milk and mix in the gula melaka and pinch of salt until it turns thick. Make sure not to leave as it easily burns. Take about half of the coconut mixture and set aside.<br />

3. Add the cooked rice into the skillet and mix carefully to coat everything with the coconut mixture. Let it simmer for about 10-15 minutes, just to make sure that the rice is cooked. Remove from heat.</div>

4. Pour the rice in a 8x8 square dish and top with the remaining coconut mixture. Bake for about 15-20 minutes at 170 degrees Celsius or until the top becomes bubble.<br />

The chicken was cooked to a perfect soft meat with crunchy coating. And I love that the rosti was well done and not too oily, unlike the ones I had in Marche before. The serving was huge so I only finished like a third of my schnitzel and had the rest taken home.</div>

On our last day in Hongkong, we went to Tim Ho Wan (IFC Mall) - the small shop with the big name. For those who don't recognize the name, Tim Ho Wan started as a small eatery in Hongkong that served some of the best dim sum thus earning them 1 Michelin star! The husband and I have been thinking about visiting their Singapore branch that opened last March 2013 in Plaza Singapura but lining up for 3 hours to get a taste of their heavenly goodies was just too much for us. Luckily, my mother in law suggested we go for a quick vacation in Hongkong when we go home in July. Was I excited! Not to mention seeing <a href="http://www.mybarecupboard.com/" target="_blank">Ms. My Bare Cupboard</a> and my little girl will get to experience Disneyland! :D<br />

We got to IFC almost 10am. Good thing there was no long queue as it was a weekday and just before the lunch crowd came. It was brunch for us. :) All tables were full but we only waited for about 10 minutes to be seated as there were 8 of us. Those smaller groups got in prettily quickly.<br />

To start off our break, we went to Hongkong last week. To be honest, I was dreading of the trip. Primarily because of having to go through NAIA 1 to take our Cathay Pacific flight. I haven't been to this terminal for over 15 years, and hearing about bad reviews about the airport made me more scared. To think we have a kid in tow and some oldies, I was a bit hesitant but the husband said it'll be okay. So I trusted him. I guess I tried to. :P</div>

But the experience that made me happy was our free access to NAIA's MIASCOR Business Lounge. We weren't flying business class but good thing we were American Express cardholders so that gave us the chance to be in the lounge instead of the crowded pre departure area. And best thing was, it was 1 cardholder plus 1 guest! So didn't have to pay extra for our companions. :) Some cardholders were given access but cannot bring in a guest so they were charged $18/guest. For me, I won't be paying that amount for an access to the lounge. I want free! Haha</div>

I have been MIA the past month. Too lazy, I know. And the weird weather isn't helping, either. The past week, we had rainy and sunny days. Good thing the little girl didn't get sick! And just a few days ago, haze started to cloud the whole city state. It was really bad yesterday, my head hurt and my nose was stuffy. It smelled like burnt wood the whole day. I wish it smelled barbecue! Grrr.<br />

Anyway, it's getting better today. I hope it rains. To cool the day, I made lemonade. Good thing I still had lemons in the pantry.<br />

Ingredients:<br />
<br />
Simple syrup (2 parts sugar, 1 part water)<br />
2 Cups Water<br />
Juice of 4 lemons<br />
Ice<br />
<br />
Method:<br />
<br />
1. Make the simple syrup by mixing the sugar and water and dissolve over low heat.<br />
2. Juice the lemons and pour in a jug. Mix in the cooled simple syrup. Add water and adjust according to your liking.<br />
3. Add ice.<br />
4. For me, I didn't put ice. I placed the juice in the freezer for about two hours. When it was just icy enough (not hard ice), I used my immersion blender to mix it. Yum-o!<br />

When we stayed overnight at Marina Bay Sands last month, we thought of trying their Chocolate Buffet. A friend of the husband joined us for the buffet so it was a bit more fun, not just the three of us. We didn't ask before making the reservations if they will be serving a la carte food. And we were thinking we could get some pasta or something, especially the little girl is with us. But I guess she was happy with all the chocolates she gobbled the entire time we were there!</div>

As usual, the bed was nice and soft and pillows were fluffy. :) Our room didn't have tub though. I guess it was a blessing in disguise because for sure the little girl won't come out of the bath! We already had a hard time pulling her out of the pool, I guess that's enough struggle for the weekend. Don't ya think? :)<br />

Every room's fridge has an automatic sensor that any item removed, it will be charged to the room right away. Tsk, tsk. Having a precocious little girl with us, we had to request for them to have the fridge locked. So they gave us a small fridge instead. It was done quickly and without any issues. Great service! </div>

We had a wonderful time in Marina Bay Sands. We tried their Chocolate Buffet but will put up a separate post on that. I cannot think of any negative feedback. I guess big hotels like this gives one of the best services to guests. Hoping we could come back in the future!</div>

The bolo bun was really really nice. Even compared to Crystal Jade's, it's wonderfully made. The crust on the top doesn't crumble easily and it was served with butter in the middle which made me extra special.</div>

Some servers couldn't speak or understand English so we had a hard time communicating. Like when one of the girls ordered for a Coke, it took 2 or 3 servers to understand and gave the drink after 30 minutes. That bad, huh?</div>

When we had the lunch at Thai Express, I can't get my mind off the coconut ice cream and glutinous rice dessert we had. So I thought, "Why not make my own?" Hmmm... But then I realized, where would I get coconut ice cream? I scoured at least 4 big grocery stores but I didn't find any, even just the Yam & Coconut was out of stock. Argh! 1. Soak the glutinous rice in water at least 6 hours or overnight. Strain and prepare for cooking.</div>

2. Cook by steaming the rice over a boiling water. The thai way is by using a basket atop a boiler and the rice is covered in cheesecloth. For me, I used a clean washcloth and steamed the glutinous rice for about an hour or until the rice becomes tender and shiny.</div>

3. In a medium bowl, cook the sugar and coconut cream. Add the cooked rice. Cook for about 15 minutes. Adjust the quantity of cream according to how much rice you have, just enough to coat it.</div>

4. Stem the rice again, but not covering with cloth anymore. Do this for about 20-30 minutes or until the rice is sticky. Let rice cool for about 30 minutes. Roll them into small balls.</div>

5. Arrange plate by putting the glutinous rice balls. Sprinkle with peanuts, serve with mango slices and a scoop of coconut ice cream. Enjoy!</div>

At last but not the least was the dessert - Coconut Paradise. The name didn't really stand out in the menu. But I wanted to try it just because of the coconut ice cream. When the server came with it, I was really curious because of the presentation. I actually don't know how to eat it but we just basically ate a spoonful of each and it was a burst of flavor in the mouth. The luscious coconut ice cream, the sweetness of the the sugar palm and papaya cubes with the sticky glutinous balls showered with the salty peanuts. Just glorious!</div>

I also used my immersion blender to make pesto sauce. I couldn't find cheap pine nuts so I opted to use walnuts instead. I loved it, I can easily adjust the sauce according to my liking! </div>

As for the star of the show, I will be honest. It wasn't as spectacular as I thought it would be. Look at the first two photos I took and the other two following photos I borrowed from other blogs. You would see the difference on the skin. Our order didn't have that much "crackle" that one would hope for, knowing that you got yourself a <i>Zubuchon lechon. </i>I'm not so sure why the skin was not as crispy looking as they claimed it to be. Nevertheless, the husband and I were just happy that we got to eat lechon again before heading back to a lechon-less country. Or should I say, affordable lechon. :P</div>

The husband has mentioned to me several times before that he wants to try the restaurant in Tampines 1 because it looks promising. So one Sunday last month, we decided to give it a try. When we entered the place, we were greeted nicely by the staff and were given a spacious seat as we have a little girl with us.</div>

It took us a while to choose what we wanted. Their menu was a mishmash of everything! From rice plates to Italian dishes to steaks to beers and wines. Whoa, it's overwhelming. After several minutes of flipping the pages over and over, we decided to get the make-your-own sampler. We had the following:</div>

I instantly fell in love with the soft shell crab. It was love at first bite, the first time I truly enjoyed a crab. Yes, I've tried Singapore's Chili Crab but this one's different. Maybe because I was able to eat everything, unlike the usual crab which you need to use a mullet, crack it open and get the meat. The husband said I should try the Thai soft shell crab because it's really tasty. I can't wait for that!<br />

The rest of the crew were just okay, I guess I was too blown away with the crab. Haha! Contrary to the online reviews I've read, service in Lena's was good. Staff were smiling and attentive. No complaints here! :) We'll be back, to try the other dishes of course.<br />

We were invited by the husband's friend over at their place. It was still Black Saturday so I thought of bringing no-meat food. Good thing I had some mushrooms, tomatoes, and bell peppers at home. So I decided to bring mushroom and caramelized onion quiche and veggie pizza. </div>

While I was preparing for my pizza, I discovered my wholewheat pita bread were covered with molds! :( I totally forgot to put it in the fridge. Frantically, I had to look for a sub. The husband said we just make something else, but I already prepared everything for the pizza! As always, thank God for the Internet, I was able to find a no yeast pizza dough. It was really good! :) So I'm sharing this one with you. </div>

<li>1 tsp. salt</li>

1. Preheat oven at 200 degrees Celsius. </div>

2. Mix dry ingredients in a bowl. Add water and oil. Stir until it forms to a dough. If dough is stiff, add more water, a teaspoon or two.<br />

3. The dough will be soft, but not sticky. Knead on a floured surface for 3-4 minutes.<br />

4. Bake at 400°F for 15-25 minutes.<br />

<b> Sponge cake</b><ul>
<li>4 egg yolks</li>
<li>4 egg whites</li>
<li>1/3 cup sugar</li>
<li>1/4 cup milk</li>
<li>3 tbsp vegetable oil</li>
<li>3/4 cup cake flour</li>
<li>1/2 tbsp baking powder</li>
<li>1/4 tsp cream of tartar</li>
</ul>
<b>Method:</b><ol>
<li>Preheat oven to 370F. Line a greased 10"x15 " cookie sheet with parchment paper. Prepare another parchment of roughly the same size and lay it on a table.</li>
<li>Combine cake flour and baking powder in a bowl.</li>
<li>Beat egg yolks and half of the sugar until you achieve a pale yellow, lemon color. Add in the oil and milk and beat for a few seconds.</li>
<li>Sift the flour mixture over the yolks.</li>
<li>Fold the flour into the yolk using a rubber spatula until combined.</li>
<li>Whisk egg whites with an electric mixer until foamy and add in cream of tartar. Continue whisking while adding remaining sugar little by little until stiff peaks are formed.</li>
<li> Fold egg whites into the yolk mixture.</li>
<li>Pour and level into the baking sheet and tap to release air bubbles.</li>
<li>Bake for 8-10 minutes or until a toothpick inserted in the middle comes out clean.</li>
<li>Remove cake from pan and cool on a wire rack.</li>
</ol>

For the filling, I made a simple mango buttercream frosting since I didn't have whipped cream at hand. Just whip 1 cup softened butter with 1/3 cup of icing sugar and add 1/2 cup chopped ripe mango slices.</div>

Spread the filling on the cooled sponge cake. Roll and chill for at least an hour. </div>

The husband ordered the seafood paella. I love the tenderness of the seafood (mussels and shrimp) however I wasn't really fond of the celery, I don't like a hint of sweetness in my paella. :D But the husband was happy so I guess this dish was value for money!<br />

We got the Cream of Asparagus and Plain Rosti (not in photo) for the little girl. But she was too busy playing in the play area, she didn't even spend more than 10 minutes with us to eat! We had to force feed (well, not really <i>force</i>, if you know what I mean :P) her with the soup. But she didn't finish it, she ate the bread we bought at the resto's bakery, though.</div>

The husband got these bruschetta as add ons (I guess to have more carbs?!!). I didn't know these were bruschettas, I guess I'm used to chopped tomatoes on top of a slice of french baguette. These were nice - warm and chewy. :)</div>

For dessert, we had the Chocolate Mousse. I spent more than 10 minutes just ogling at the desserts. I couldn't make up my mind! Good thing I chose this over the Panna Cotta. The husband loved it because it's Dark Chocolate! </div>

We paid a total of $52 inclusive of everything. Not bad for all the food we had. They gave our little girl a balloon and they have free pretty little mints after you pay. Of course, we will be back. To try the pork knuckle, perhaps? :D</div>

<b>Ingredients:</b><br />

<li>3 egg yolks</li>
<li>1/8 tsp salt</li>
<li>1/8 cup corn oil</li>
<li>1/8 milk</li>
<li>1/2 tsp vanilla extract</li>
<li>1/4 cup cake flour</li>
<li>1/8 tsp baking powder (sift together with cake flour)</li>
</ul>
<ul>
<li>3 egg whites</li>
<li>1/4 tsp cream of tartar</li>
<li>1/8 cup + 1 tsp caster sugar</li>
</ul>

<b>Frosting:</b><br />

<li>60 grams whipping cream</li>
<li>10 grams sugar</li>
<li>1 tsp custard powder</li>
<li>5 tsp strawberry jam</li>
</ul>

<b>Method:</b><br />
<br />
1. Preheat oven to 175℃。<br />
2. In a bowl, whisk egg yolks with salt. Then add oil, milk and vanilla extract, whisk till well-blended.<br />
3. Fold in flour mixture and set aside.<br />
4. In another bowl, beat egg whites , sugar and cream of tartar to stiff peak.<br />
5. Scoop 1/3 of the egg white mixture to the yolk batter, fold well, then pour batter back to the remaining egg whites. Fold lightly till well-mixed.<br />
6. Fill baking cases with about 30-32g of batter. Bake for 20 mins, then leave to cool.<br />
7. Beat cream with sugar until stiff, add in the custard powder, mix well. Pipe on top of the cupcakes.<br />
8. Add a small dollop of jam on top. Chill before serving.<br />
